My Hillbilly Blueberry Muffins
Muffin Ingredients
***************************************************** 1 3/4 cup all purpose flour 1/3 cup sugar 2 tsp. baking powder 1/4 tsp. salt 1 beaten egg 3/4 cup milk 1/4 cup cooking oil 1 tsp.vanilla 3/4 or 1 cup frozen or fresh blueberries |
Crumb Topping
***************************************************** 1/4 cup all purpose flour 1/4 cup brown sugar 2 tbsp.chilled butter 1 tsp.cinnamon ------------------------------------------------------------------------------------- Combine all ingredients with fork or hands until the mix feels like crumbs. |
Directions:
1. Grease 12 cup regular size muffin tin. In a medium mixing bowl combine flour,sugar,baking powder and salt. After combined make a well in the center of the dry mixture and set aside.
2. In another mixing bowl combine egg,vanilla,milk and oil. Add egg mixture all at once to the dry mixture. Stir until just moistened, it will look a little lumpy. Add blueberries or any fruit or nuts.
3. Spoon batter into muffin cups.
Fill 2/3 of each cup in tin. Then top with crumb topping and bake in a 350 degree oven for 20-30 minutes until golden brown. Cool muffins on a wire rack for 5 minutes.....M.G.

My Apple Cider Doughnuts
************* Yields about 18. Ingredients : 1 cup apple cider 1 cup granulated sugar 2 1/2 cups of flour additional flour for work surface 2 teaspoons of baking powder 1 teaspoon baking soda 1/2 teaspoon of cinnamon 1/2 teaspoon of ground nutmeg 1/8 teaspoon of salt 4 tablespoons of butter 2 eggs 1/2 cup of buttermilk or (low fat milk or no fat milk. ************************************** For the Glaze 1 cup of confectioner's sugar 2 tablespoons of apple cider ************************************** for maple glaze 1 1/4 cup of confectioner's sugar sifted 1 teaspoon vanilla 1/3 cup pure maple syrup. ************************************** Granulated coating 1 cup granulated sugar 1/2 teaspoon of cinnamon ************************************** Vegetable oil for frying the doughnuts ************************************** Directions : 1) Boil apple cider in a small sauce pan ..until reduced to 1/4 cup .about 20 to 30 minutes. set aside to cool. 2)Beat butter and sugar til creamy then add eggs one at a time....until well mixed 3) add buttermilk and reduced cider and stir together. 4)Stir together in another bowl flour and salt and baking powder and baking soda and cinnamon and nutmeg . 5) add liquid ingredients to the dry ingredients just enough to combine . 6)Transfer to floured work surface sprinkle with flour and use a floured rolling pin to lightly roll out the dough. 7) roll the dough until it is 1/2 inch thick...then with your floured 3 inch doughnut cutter... cut the doughnuts..use more flour if the dough is still sticky.. 8) transfer doughnuts to lightly floured parchment or wax paper then place in freezer until they are slightly hardened ..about 20 minutes. 9)make the glazes while dough is in the freezer..Whisk each glaze until smooth.place sugar coating in a small paper bag. 10) fill a heavy sauce pan 3 inch high with vegetable oil ..temp should be 350 for frying check with frying thermometer..or a candy one. 11)when temp is reached ..then start placing doughnuts in hot oil. turn then once or twice until golden brown and cooked through ..about 1 minute per side...be careful cause then can quickly burn. 12)remove doughnuts with metal tongs or a large slotted spoon...set on paper towel to drain excess oil.while still warm shake a few in a paper bag with cinnamon and sugar in it ...and let a few doughnuts cool a little... to glaze...then with a tablespoon ...spoon glaze over doughnuts. then cool on a cooling rack ..and then serve..yum! about 200 calories per doughnut. |
